{"id":12197,"date":"2025-12-10T15:18:49","date_gmt":"2025-12-10T12:18:49","guid":{"rendered":"https:\/\/www.diatrofiki.com.gr\/revythada-lemonati-ston-fourno\/"},"modified":"2025-12-11T15:18:59","modified_gmt":"2025-12-11T12:18:59","slug":"lemon-checkpea-soup-in-the-oven","status":"publish","type":"post","link":"https:\/\/www.diatrofiki.com.gr\/en\/lemon-checkpea-soup-in-the-oven\/","title":{"rendered":"Lemon chickpea soup in the oven"},"content":{"rendered":"\n<h4 class=\"wp-block-heading\">Lemon chickpea soup in the oven<\/h4>\n\n\n\n<h5 class=\"wp-block-heading\">Ingredients<\/h5>\n\n\n\n<p>\u2219<strong>500 g<\/strong> large chickpeas<br>\u2219<strong>1<\/strong> large dry onion, finely chopped<br>\u2219<strong>2 <\/strong>cloves garlic, finely chopped<br>\u2219<strong>100 ml<\/strong> olive oil (and a little extra for the end)<br>\u2219<strong>1-2 carrots<\/strong>, sliced (optional, for extra flavor and color)<br>\u2219<strong>2<\/strong> tbsp flour (optional, to thicken the sauce)<br>\u2219<strong>Juice of 1-2<\/strong> lemons (depending on how lemony you want it)<br>\u2219<strong>Zest of 1<\/strong> lemon<br>\u2219<strong>1<\/strong> tsp oregano (or thyme)<br>\u2219<strong>Salt &amp; pepper<br><\/strong>\u2219<strong>Hot water<\/strong> (about 1.5 liters or enough to cover the chickpeas)<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Instructions<\/h5>\n\n\n\n<h5 class=\"wp-block-heading\">Preparation<\/h5>\n\n\n\n<p>Soaking: The night before, soak the chickpeas in plenty of water (you can add a teaspoon of baking soda for faster cooking).<\/p>\n\n\n\n<p>Boiling: The next day, drain and rinse them well, then boil in a pot with fresh water for about 15-20 minutes, skimming off any foam that forms. Drain again. (For faster oven cooking, you can boil them in a pressure cooker for 30 minutes).<\/p>\n\n\n\n<h5 class=\"wp-block-heading\">Cooking<\/h5>\n\n\n\n<p><strong>Saut\u00e9ing:<\/strong> Preheat the oven to <strong>180\u00b0C<\/strong> (fan or conventional). In a non-stick pan, heat the olive oil and saut\u00e9 the chopped onion and garlic until soft and translucent. Add the carrot if using.<\/p>\n\n\n\n<p><strong>Thickening (optional):<\/strong> Sprinkle with the flour and stir for 1 minute.<\/p>\n\n\n\n<p><strong>Sauce &amp; Baking: <\/strong>Transfer the chickpeas to a casserole dish or deep ovenproof dish with a lid. Add the ingredients from the pan, oregano, salt, pepper, lemon juice, and lemon zest.<\/p>\n\n\n\n<p><strong>Liquid: <\/strong>Add enough hot water to cover the chickpeas (about 2-3 fingers above them). Mix well.<\/p>\n\n\n\n<p><strong>Baking: <\/strong>Cover the casserole or dish with the lid (or aluminum foil if you don\u2019t have a lid) and bake in the preheated oven for about <strong>1 to 1.5 hours<\/strong>, until the chickpeas are tender and the sauce has thickened.<\/p>\n\n\n\n<p><strong>Finishing:<\/strong> Towards the end of baking, uncover the dish to allow it to brown slightly, if desired.
